Happy Birthday MOM! I’m sure Heaven has cake! Been 5 months and we aren’t any closer to cleaning up all your stuff at the house. Guess we really should have listened to you when you kept saying we needed to start dealing with it. Actually you should have started doing it years ago when you stopped doing all your crafts and cakes. We could have sold all the stuff while you were still alive and you would have had some extra money! Oh well it is what it is. I hope that at least you are somewhere that you smile again.

NEW TOY! NEW TOY!

OK now that that is out of the way buying a new vehicle really sucks. It’s really nice but I kind of feel like I was a little bit hosed. I’m only leasing it but…the payment is a bit more than I wanted to pay. I need to go back and look at the total price because the window sticker was a lot lower than what I saw on the paper work. Note to self, demand to be there when they are figuring out the price thing. It really kind of irks me that you sit with the salesman and he runs back and forth and back and forth while they work the numbers. Oh well it is what it is. Next time….aka two years when the lease is up.

All the guys are work were sweet ride! Brother even said it was sharp looking, even though he called it a Donkey! I’m not sure that I can get used to the no shifter, the dial is really weird. All the electronic are a waste on me really, but I like the looks of the outside. Inside is a bit smaller than I thought it was when I sat in the one at the lot the first time. It’s zippy though. Drives a lot easier than the Ranger did. Bronco Sport.

Customer Service appreciation week. Yippie….insert sarcasm. We get to play BINGO each day and the winner gets to pick from a bunch of lame gifts. The boss tries but there isn’t really anything their that I would want if I won. Gift cards would be so much better. Guess they can’t do the gift cards any more something about them using the corporate card to buy them something about it makes the card vulnerable to fraud. Who knew. Get free food though so that is nice.

Apple-Ham Quiche

Ingredients

1 2/3 cups all-purpose flour (about 7 1/8 ounces), plus more for dusting

2 3/4 teaspoon kosher salt, divided

1 teaspoon black pepper, divided

1/2 cup chilled unsalted butter (4 ounces), cubed

7 tablespoons ice water

3/4 pound thinly sliced Black Forest ham, cut into 1 1/4-inch-wide strips

1 large Granny Smith apple (about 10 ounce), quartered, cored, and very thinly sliced on a mandolin

2 ounces sharp white cheddar cheese, finely shredded (about 1/2 cup)

1 1/4 cups half-and-half

2 large eggs

1 large egg yolk

1 teaspoon finely chopped fresh thyme

Directions

1. Place flour, 1 1/4 teaspoons salt, and 1/2 teaspoon pepper in a food processor; pulse until combined, about 2 times. Add cubed butter, and pulse in 1-second bursts until mixture resembles coarse meal, 8 to 10 times. Drizzle 7 tablespoons ice water over flour mixture, and pulse until dough comes together, 8 to 10 times. Turn dough out onto a lightly floured work surface; gather up any crumbs, and pat into a disk. Wrap disk in plastic wrap, and refrigerate until chilled, about 45 minutes.

2. Preheat oven to 375°F. On a lightly floured work surface, roll out chilled dough into a 12-inch round. Fit dough round into a 10-inch fluted tart pan with removable bottom, pressing dough onto bottom and into fluted edges of pan. Trim overhang until even with rim of pan. Chill tart shell 30 minutes.

3. Line tart shell with parchment paper, and fill to top with pie weights or dried beans. (This ensures your dough won’t shrink down the sides when baking.) Bake in preheated oven until crust is set and light golden, about 40 minutes. Remove weights and parchment; bake until golden and crisp, 10 to 12 minutes. Let cool.

4. Place 1 strip of ham on a work surface. Arrange a row of slightly overlapping apple slices lengthwise on ham strip; roll up loosely, and place in baked tart shell, spiral side up. Repeat process with remaining ham strips and apple slices to fill tart shell. Sprinkle cheese over top. Whisk together half-and-half, eggs, egg yolk, thyme, remaining 1 1/2 teaspoons salt, and remaining 1/2 teaspoon pepper. Pour custard in and around apple-ham rolls.

5. Bake at 375°F until custard is just set, 45 to 50 minutes, loosely tenting with foil to prevent excess browning, if necessary. Transfer quiche to a rack, and let cool 15 minutes. Carefully lift quiche out of pan and cut into wedges. Serve warm or at room temperature.
